Instant Idli

Don’t let the long Idli making process stop you from enjoying quick and delicious idli. No, I’m not talking about Gits instant mixes. Although I must say their Sambhar and Rasam are quite tasty. In fact, Gits is the only company I approve of when it comes cooking out of a “box.” However, some things are best left to be made from scratch. That does not mean that you must go through a long and difficult process. This simple idli recipe from scratch is so easy to make and doesn’t compromise on taste!

2 cups cream of rice

1 cup urad flour

salt-to taste

1/8 tsp baking soda

Mix all the ingredients together. Add warm water and make a paste, not too thick or runny, making sure all lumps are broken. Let stand for a couple of hours or overnight, if you have the time. Otherwise you can cook it right away. Pour into idli molds. Place the idli stand in boiling water and cook covered for about 10-15 minutes. Serve with Coconut Chutney and Sambhar.
